Gomo Kimchi Fried Rice

Ingredients:
- Your choice of protein (e.g. chicken, fish, tofu)
- 1 tbsp veggie oil
- 125g sliced onion
- ½ tin of diced spam
- 250g Gomo Kimchi
- 1 tbsp butter
- 2 bowls cooked white rice
- 2 tbsp sesame oil
- 2 tbsp soy sauce
- 1 tbsp minced garlic
- Green onion
- 1 egg
- 1 tsp monosodium glutamate (msg) (optional)
Directions:
- Fry (medium to high heat) your choice of protein in 1 tbsp of veggie oil until browned. (We use ½ tin diced spam or a handful of mushrooms). Season lightly with soy sauce and pepper.
- Add 125g of sliced onion (cutting it lengthwise from the root end to the stem end) and fry (high heat) for 1 min.
- Add 250g of Gomo Kimchi, drained and chopped (save the juice!), and fry until kimchi begins turning translucent.
- Add 1 tbsp of butter.
- Add two large bowls of cooked white rice (day old is ideal, but fresh rice will work if you let it sit for about half an hour). Mix thoroughly with 2 tbsp of sesame oil, 2 tbsp of soy sauce and 1 tbsp of minced garlic. Turn heat down to medium high heat.
- Add 1/4 cup of Gomo Kimchi juice and mix thoroughly.
- Add sliced green onions and mix.
- Pack fried rice tightly in pan and let sit on medium heat until a crust forms at the bottom.
Optional:
- Serve with fried egg on top.
- Season oil at the beginning with the green onion ends (remove after seasoning).
- Add 1 tsp of msg during step 4.
