Sand Cake

In her research into Charles Rennie Mackintosh and the history of Glasgow Tea Rooms, academic Perilla Kinchin records an historical recollection from an acquaintance of Mackintosh regarding a special cake he enjoyed. This cake is known as a Sand Cake, with a fine, sand-like texture and a light lemon flavour.  

Ingredients: 

  • 150g butter 
  • 150g caster sugar 
  • 3 eggs, beaten 
  • ½ tsp grated lemon peel 
  • 100g cornflour 
  • 100g plain flour 
  • 1 tsp baking powder 
  • 2-3 tbsp milk 

Method: 

  1. Preheat oven to 160 degrees centigrade 
  2. Grease 20cm diameter cake pan 
  3. Cream butter and sugar until pale and fluffy 
  4. Add eggs and lemon incrementally, beating well after each addition 
  5. Add flours and baking powder, and mix well 
  6. Add milk to make a soft mixture 
  7. Spread into prepared pan 
  8. Bake for 45 minutes
