What's the inspiration behind 111 by Modou?
Senegalese-born Modou Diagne spent much of his childhood in Spain. In 2013, he arrived in Glasgow alone, sleeping rough until finding refuge in a homeless shelter. Committed to changing his circumstances, it took Modou a year of applying for jobs before landing his first role as a kitchen porter at chef Nico Simeone’s restaurant, 111 by Nico.
Recognising Modou’s positive work ethic, Nico began teaching him the fundamentals of working in a kitchen, and by 2018 he had worked his way up to head chef. In 2020, Nico announced that the restaurant was now his, changing the name to 111 by Modou. “This opportunity has completely changed my life and it’s thanks to my self-belief and hard work that I’ve been able to realise my dream. Trust me, if I can achieve this, anyone can!” Modou Diagne, 111 by Modou.
At 111 by Modou, imaginative tasting menus focus on showcasing local, seasonal Scottish produce, with an element of surprise. You can put your appetite for surprise to the test by choosing the ten-course ‘trust’ tasting menu. Here, the dishes you receive aren’t shown in advance – instead putting your faith in Modou and his team’s inventive culinary experience to wow you.
What role does 111 by Modou play in creating a sense of community and belonging?
Modou has used his life experiences to help shape immersive dining experiences. From his favourite childhood food, to recollections of his time with mentor Nico Simeone, the Inspire tasting menu encourages diners to learn about Modou’s story from their plates. “Cooking is my creative expression, so what better way to share my narrative than with food and hopefully inspire guests to experience both my story and my cuisine.” Modou Diagne, 111 by Modou.
Having experienced life on the streets, Modou also recognises the powerful role local businesses and communities can play in combatting hunger and providing sustenance to those in need. Supporting these principals, Modou cooked in a local community church for vulnerable people during the pandemic.
