What's the inspiration behind Swadish by Ajay Kumar?

It was as early as the graduation day of his computing degree that Ajay Kumar decided on a career change.  Inspired by the cookery skills of his father and grandmother, and seduced by the creative freedom of the kitchen, he swiftly decided to enrol in Chopra School of Cooking.  

Gaining experience in renowned restaurants in India, Malaysia and Singapore, Ajay moved to Scotland in search of something new.  As many do, he fell in love with the Scottish people, our rich and diverse produce, and has never left!  Ajay went on to open Swadish in May 2019 alongside his wife Jas, with the ambition of transforming Scotland’s perception of Indian cuisine.  He credits Jas for being the backbone of the business, heading up front of house and keeping everything behind the scenes running smoothly. 

Despite the challenges of opening just before Covid, Swadish (meaning delicious in Hindi) has grown from strength to strength, currently holding 2 AA Rosettes for culinary excellence and securing multiple high-profile awards.  2024 also saw Ajay reach the final of the BBC’s Great British Menu, winning the Scotland heat with his 16-element Indian street food chaat.
