What's the inspiration behind The Gannet?
Growing up in rural Monaghan, Ireland, in the 80s, Peter knew from a young age that he wanted to work in hospitality. Described as a ‘greedy gannet’ by his parents while working for them in the local bar, Peter worked his way through the ranks, washing pots in a hotel kitchen as a teenager to travelling the world cooking in top-class kitchens. Returning to the UK, Peter rekindled a friendship with Glaswegian born Chala, after meeting abroad, and as friendship turned to romance, he’s been settled in the city for almost two decades.
During his time working as a sous chef in Glasgow, Peter reconnected with friends, Ivan Stein and Peter Read, and the trio pursued their long standing plans of opening a restaurant together. Eventually, they took on the lease of a derelict ground floor tenement in Finnieston – an under-loved area of Glasgow at the time.
Opening in 2013, The Gannet was one of Glasgow’s first restaurants to exclusively offer a tasting menu experience. Twelve years on, the menu has evolved to introduce an á la carte option to offer a more informal experience for guests. No matter the format of the menu, you’re guaranteed exceptional Scottish food and the warmest of welcomes, evidenced by the many accolades the team have picked up over the years.

What role does The Gannet play in creating a sense of community and belonging?
In addition to managing The Gannet, Peter volunteers for several community outreach projects, including school visits to inspire youngsters into joining the industry, to supporting local foodbanks and community meal projects.

Fun fact – did you know?
Three-part psychological thriller, Fear, was recently filmed in Glasgow, using The Gannet as a shooting location. The show stars Scottish actor, Martin Compston, and none other than The Gannet’s Restaurant Manager, Kevin Dow!
